The ancient Greeks had a special word for oil produced from young olives, "agourelio", revered for its emerald-green sheen, peppery, pleasantly bitter taste and intensely grassy aroma. Unripe olives produce less oil and need to be picked right from the trees which takes more time.
The unripe olives are abundant in polyphenols. With levels up to five times that of olives picked during traditional harvest times, these polyphenols have been credited with significant anti-inflammatory, antioxidant, cardio-protective and neuro-protective properties.
Early harvest Oil has a longer shelf life. Our early harvest is directly from our own olive groove in Astros, Peloponnese, Greece.
